On any given night, a favorite “go-to” of mine is Tomato Soup and Grilled Cheese. This recipe is one of the best tasting and easiest homemade tomato soup recipes I have ever made. Canned soup is nice and easy but the freshness of having these ingredients on hand and preparing homemade soup just has a nice warmth and loving energy to it.
Ingredients:
Cast Iron Stock Pot
Immersion Blender/Regular Blender
8 Medium Tomatoes
1 White Onion
1 Red Bell Pepper
1 Tbsp. Garlic
1 Tbsp. Olive Oil/Avocado Oil
Italian Seasoning
Salt and Pepper
Milk (Optional)
Recipe:
- Preheat oven to 400 degrees Fahrenheit
- Wash the tomatoes and cut all of them into fourths.
- Cut the bell pepper into fourths, removing the seeds.
- Cut up the onion into small chunks (any type of cut is correct)
- Put all of your seasonings and garlic, plus the tomatoes, bell pepper and onion into the Stock Pot.
- Drizzle all items with 1 Tbsp. of Avocado or Olive Oil and toss/mix to coat evenly.
- Place into oven and bake for 45 minutes, stirring items occasionally.
- After 45 minutes, pull Stock Pot out of oven and blend all ingredients together to consistency of your choosing. At this point, if you would like to add milk feel free to do so.
- Season to your hearts content and to your liking.
- Serve and Enjoy!

Total Cost: $20.50 for feeding six plus people with fresh ingredients! This is a great fall dinner when all of these veggies are ready for harvest. If you can find them at your local farmers market, the price could be even cheaper.
