Working a 9-5 job, I try my best to make sure that my husband and I eat healthy while we are at work. I work at an office job that has access to a microwave as well as a cookie oven. I often use the cookie oven to cook my chicken since it is never used. For my oven chicken recipe, click here. During the week I love to eat oatmeal with protein powder for breakfast, but sometimes I like to switch things up. One of my go to recipes is Quiche. Filled with good protein, carbs and veggies, it is a well-balanced meal that keeps me full. It is also super easy and cost effective so let’s jump right in!
Ingredients:
½ Green Bell Pepper
½ Red Bell Pepper
1 Zucchini
12 Eggs
½ cup Milk
1 Box of Instant Shredded Potatoes
1 Cup Mozzarella Cheese
Butter/Non-Stick Spray
Seasonings:
1 tsp Salt
2 tsp Pepper
2 Tbsp. Boars Night Out – White Lightning with Double Garlic Butter (Optional)
Other Items Needed:
11×7 Rectangular Baking Dish
Recipe:
- Start by rehydrating your dehydrated potatoes with hot water. Let sit for 12 minutes.
- Preheat the oven to 425 degrees Fahrenheit.
- Wash and cut the bell peppers and zucchini into small pieces. Put them into a large bowl.
- Crack the eggs into the bowl and whisk in with the vegetables.
- Add the milk and mozzarella cheese.
- Once all is mixed, add seasonings – always feel free to add more or less based on your preference.
- Take your butter or non-stick spray and coat your baking dish.
- Pour the rehydrated potatoes into the bottom of the pan and evenly spread out.
- Next, pour the egg and veggie mixture over the top of the potatoes as evenly as possible.
- Place baking dish into the oven and cook for 30 minutes. Make sure to check the center with a toothpick.
This is one of my favorite meals to cook because it can feed so many people for a little amount of money!
Cost Breakdown:
Dozen Eggs – $3.00
Bell Peppers – $1.50/ea
Zucchini- $0.90/ ea
Milk – $3-$10 (Depending on the type of Milk)
Dehydrated Potatoes – $11 for a pack of 10
Mozzarella Cheese – $2.50
Total Cost: $23.40
This meal can be made for a family of 6 for one meal or can be used for the whole week for 1-2 people. My mixture made 5 days’ worth of breakfast for 2 people. 10 pieces of Quiche total. For me and my currently cycle of life, I love the quick and easy meals that cost as little as possible but are still healthy for my husband and I.
